Easy Bacon Egg Muffins


Don't get me wrong, I love bacon and eggs. But after having two strips of bacon and a fried egg for breakfast for something like a week in a row I was ready for a change. So here is a great and easy recipe for bacon and eggs, a different way. Bacon and eggs are very low in carbohydrates. Eggs typically have a good amount of healthy Omega-3 fats. Bacon is high in fat and protein which will keep you full for longer than carbs will. It also satisfies cravings without adding too many calories. It is very difficult to eat too much bacon whereas if you're snacking on chips the opposite is usually true. 



Ingredients:
  • Eggs
  • Bacon
Cook Time:
  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
Instructions:

  1. Preheat oven to 350 degrees. 
  2. Line muffin pan with bacon strips, one strip per cup. 
  3. Using a 2 to 1 bacon to egg ratio, beat eggs and pour into bacon lined cups. There's no need to grease the pan, the bacon will take care of that for you. 
  4. Place in the oven for 20-25 minutes or until the eggs spring back when pressed down with a spoon.  
  5. Enjoy your muffins! Each muffin should be about 100 to 150 filling calories.

Roland

I woke up that morning with a feeling of quiet resolve. Without any outward signs I somehow knew that this was the day. That morning I did the finishing touches on the hospital bag. I wrote a checklist and a note to my midwife in the likely event that I wouldn't feel up to having a discussion. At night I went to my first group knitting meeting staying for an hour before I drove to my parent's house. I remember telling my dad goodbye, saying that I needed to get home before the contractions start.
